Recipe: Easy Dinner for Seafood Lovers

When I made this Mediterranean(y) inspired dish I never thought of writing a recipe for it. After posting it on my Whatsapp Story (Yes I post on Whatsapp!) a lot of persons asked me for a recipe. In the name of efficiency I decided to write a blog!

Honestly, I thought of the dish and what I wanted it to taste like… then made it. So no measurements here!

Greek Inspired Potato Salad

(Inspired by this recipe)

Ingredients: (no measurements sorry!)

Potatoes; Greek salad cheese (or feta cheese); Herbs such as: dill and basil; spring onion; onion; sweet pepper; cherry tomatoes; eggs; pepper flakes; salt and pepper

Sauce: mustard; lemon juice; apple cider vinegar (red wine vinegar would be awesome!); olive oil; garlic paste

This was super simple to make. Boil the eggs and the potatoes until they’re fork tender. While that’s happening dice and chop roughly all the herbs and aromatics. I sliced the cherry tomatoes into four and the onions into thin rings. Hold off on seasoning until you make the sauce. Mix together garlic paste- I used a lot! Equal parts lemon juice and vinegar (might be super acidic btw), mustard and the majority of it was olive oil. Mix together until you get an emulsion. I seasoned my sauce to taste with salt and pepper. Once the potatoes are boiled dice them into medium sized cubes, same for the eggs and toss everything together. Once you’re done season to taste with pepper flakes, salt and black pepper. I garnished with some more flakey cheese and black pepper

‘Pick Up’ Octopus (Octopus Ceviche Like Dish)

This recipe? I totally winged! I saw some cooked octopus in sunflower oil (drain ALL the oil!) and thought they’d be yummy tossed together with the same herbs and aromatics as above, some garlic paste, lemon juice and I used scotch bonnet pepper here instead of pepper flakes. Then seasoned with salt and pepper to taste. SO GOOD!

Pan Seared Salmon

Another easy one, there are so many recipes out there! I heated olive oil in a pan until it was smoking hot then put the salmon skin down to get it nice and crispy. While it was searing I added whole garlic cloves in the pan. I flipped it and lowered the heat, squeezed lemon juice all over and added a slice to the salmon and some in the oil and cover and let it cook/steam/poach. For this I seasoned with salt and pepper after for no particular reason.

And that’s it! I enjoyed this absolutely delicious and easy mean with a nice glass of Chardonnay (just some cheap bottle from my local Lidl). And yes- I did make dessert.

For dessert I got a cronut (apparently its a croissant and a donut- it was my first time having it) and I also had some really thick (almost greek consistency) yogurt that had a sauce of mandarin and lime. I cut the cronut in half, put the yogurt in the middle and did some fancy decorating and ate with a spoon. I was going for an “ice cream and brownie” effect.

If you try anything in this ‘recipe’ please let me know! And tell me- should I do more of these?

Enjoy!

Sam
